A bold, umami-rich marinade of soy, garlic and sesame transforms a simple steak into something extraordinary. Pan-fried with a perfect crust.
🍽 Ingredients
- 2 ribeye or sirloin steaks (250g each)
- 4 tbsp soy sauce
- 4 garlic cloves, minced
- 1 tbsp sesame oil
- 1 tbsp honey
- 1 tsp ginger, grated
- 1 tsp black pepper
- 1 tbsp vegetable oil
- Spring onions and sesame seeds to garnish
🔧 Method
- Combine soy sauce, garlic, sesame oil, honey, ginger and black pepper. Marinate steaks for at least 30 minutes (up to 4 hours).
- Remove steaks from marinade and pat dry. Reserve the marinade.
- Heat vegetable oil in a cast iron pan over very high heat until smoking.
- Sear steaks for 2–3 minutes per side for medium-rare. Rest on a board.
- Pour reserved marinade into the pan and simmer for 2 minutes until slightly thickened.
- Slice steak against the grain, drizzle with pan sauce, scatter with spring onions and sesame seeds.
💡 Tips & Notes
Patting the steak dry before searing is essential — the Maillard reaction (that gorgeous crust) requires a dry surface. Don't move the steak once it's in the pan.
